Sunshine Salad

- 1 16-oz can salad cut hearts of palm; shopping list
- 5 roma tomatoes, sliced, each slice cut in two shopping list
- 1 small yellow summer squash, coarsely chopped shopping list
- juice of one lime or one lemon shopping list
- 1 garlic clove shopping list
- 5 to 6 fresh basil leaves, sliced shopping list
- 1/2 cup extra virgin olive oil (or less – use to taste) shopping list
- 1/4 cup balsamic vinegar shopping list
- salt and pepper to taste shopping list
How to make it
- Drain and wash the heart of palm with cold water;
- Place the heart of palm, tomatoes and squash in bowl and add the chopped garlic and sliced basil.
- Salt and pepper to taste then add the lime juice and the olive oil and balsamic vinegar. Toss gently.
- Let stand for about one hour at room temperature before serving.
