Sunshine Salad Recipe
This is great for lunch with hummus and crackers on the side. Cook time is sitting time.

Ingredients
  • 1 16-oz can salad cut hearts of palm;
  • 5 Roma tomatoes, sliced, each slice cut in two
  • 1 small yellow summer squash, coarsely chopped
  • juice of one lime or one lemon
  • 1 garlic clove
  • 5 to 6 fresh basil leaves, sliced
  • 1/2 cup extra virgin olive oil (or less – use to taste)
  • 1/4 cup balsamic vinegar
  • salt and pepper to taste

Directions
  1. Drain and wash the heart of palm with cold water;
  2. Place the heart of palm, tomatoes and squash in bowl and add the chopped garlic and sliced basil.
  3. Salt and pepper to taste then add the lime juice and the olive oil and balsamic vinegar. Toss gently.
  4. Let stand for about one hour at room temperature before serving.
