Ingredients
  • ¾ cup sugar
  • ⅓ cup oil
  • 1 egg
  • 1 teaspoon vanilla
  • 1 cup rhubarb sauce (unsweetened)
  • ¼ tsp. cinnamon
  • 1⅓ cups flour
  • ¼ teaspoon salt
  • 2 cups oatmeal (not instant)
  • ½ teaspoon soda
  • ½ teaspoon baking powder
  • ½ cup chopped walnuts

Directions
  1. Mix sugar and oil together.
  2. Add beaten egg, vanilla, rhubarb sauce and oatmeal.
  3. Sift dry ingredients together and add to first mixture.
  4. Stir in walnuts.
  5. Drop from teaspoon onto cookie sheet.
  6. Bake at 375°F for 15 min. or until golden brown.
