How to make it

  • Put beans in bowl and cover with warm water, set aside until water comes to room temperture
  • Drain beans, than cook in a gallon of boiling salted water until done, 3-5 minutes - Beans are done with they still have a slight raw flavor but are crisp and bright green
  • As soon as done, remove and shock in ice water, drain
  • Place beans and remaning ingredients in large saute pan and place over medium-high heat
  • Saute, stirring occasionally, until water evaporates, butter coats beans and cooks shallots, 1-2 minutes
  • Adjust seasoning to taste
