Sandy DAmatos Sauteed Green Beans with Shallots and Nutmeg

- 1 lb. green beans shopping list
- 2 shallots, peeled and sliced thinly shopping list
- 3 tbsp. butter shopping list
- 2 tsbp. water shopping list
- kosher salt, pepper and nutmeg to taste (the fresher the nutmeg the better) shopping list
How to make it
- Put beans in bowl and cover with warm water, set aside until water comes to room temperture
- Drain beans, than cook in a gallon of boiling salted water until done, 3-5 minutes - Beans are done with they still have a slight raw flavor but are crisp and bright green
- As soon as done, remove and shock in ice water, drain
- Place beans and remaning ingredients in large saute pan and place over medium-high heat
- Saute, stirring occasionally, until water evaporates, butter coats beans and cooks shallots, 1-2 minutes
- Adjust seasoning to taste
