Lamb with Chickpeas

- 2 glasses of tinned chickpeas shopping list
- 250g of lamb cubed shopping list
- 4 tablespoons of butter or margarine shopping list
- 1 large onion diced shopping list
- 2 large tomatoes or 3 tablespoons of tomato paste shopping list
- 4-5 glasses of meat stock or water shopping list
- 1 green or red pepper shopping list
- salt. shopping list
How to make it
- Skin and cube the tomatoes and set aside.
- chop the onions
- melt the butter in a large pan and fry the onions until brown
- add the meat and cook stirring occasionally until the juices evapourate
- Add the peeled and chopped tomatoes, the pepper sliced ,2 glasses of stock and season with salt.
- cover and cook on a very low heat for 45 mins
- add the beans and more stock if neccessary.
- cover and let simmer until the beans are tender
- if the stew is watery briskly boil uncovered.
- serve over rice and garnish with red pepper flakes.
