How to make it

  • Skin and cube the tomatoes and set aside.
  • chop the onions
  • melt the butter in a large pan and fry the onions until brown
  • add the meat and cook stirring occasionally until the juices evapourate
  • Add the peeled and chopped tomatoes, the pepper sliced ,2 glasses of stock and season with salt.
  • cover and cook on a very low heat for 45 mins
  • add the beans and more stock if neccessary.
  • cover and let simmer until the beans are tender
  • if the stew is watery briskly boil uncovered.
  • serve over rice and garnish with red pepper flakes.
