white flaky fish- poached of course... 10 minute prep time does not include catchin the fish..some are quicker than others...

Ingredients
  • one northern pike -two pounds -filleted
  • one handful fresh chives
  • one half stick butter
  • one bottle of beer

Directions
  1. put pike fillets in tin foil folded enevelope..double layer of foil
  2. you want four envelopes-divide fish equally in fourths
  3. 1 pat of butter per envelope cut and placed in chunks
  4. sprinkle each fish fillet with chives
  5. fold the envelopes so they do not leak
  6. one quarter bottle of beer per envelope
  7. set envelopes directly in coals or atop the grate in your charcoal grill
  8. cook ten minutes and rotate envelopes if set on live coals.
  9. cook ten minutes more and poke each envelope once with a toothpick for a steam release..mid envelope works best, on top
  10. check after five minutes opening one envelope...if fish is flaky white its done..if not , five more minutes and get out the forks..
