How to make it

  • put pike fillets in tin foil folded enevelope..double layer of foil
  • you want four envelopes-divide fish equally in fourths
  • 1 pat of butter per envelope cut and placed in chunks
  • sprinkle each fish fillet with chives
  • fold the envelopes so they do not leak
  • one quarter bottle of beer per envelope
  • set envelopes directly in coals or atop the grate in your charcoal grill
  • cook ten minutes and rotate envelopes if set on live coals.
  • cook ten minutes more and poke each envelope once with a toothpick for a steam release..mid envelope works best, on top
  • check after five minutes opening one envelope...if fish is flaky white its done..if not , five more minutes and get out the forks..
