This is a Cypriot dish very healthy and nutritional. The combination of legumes with rice (no allergies, no cholesterol, salt or fat) is excellent for vegetarians or those fasting as it is an excellent protein source.

Ingredients
  • 1 cup of brown small lentils
  • 4 cups of water
  • 1/4 cup of rice, short grain or arborio or any small shaped pasta
  • 1 big onion finely chopped
  • 1/4 extra virgin olive oil (reserve 2 spoonfuls for the end)
  • Salt and pepper

Directions
  1. Wash lentils but before doing so check if there is anything to be removed, maybe a small stone etc.
  2. Boil lentils for ten minutes, then strain and add fresh water (just to cover them) and put to boil again.
  3. Meantime, heat oil and sauté the onion until slightly browned.
  4. When lentils begin boiling, add rice (or pasta), salt and pepper.
  5. Lower heat and cook for 15 minutes until rice is soft 5 minutes before they are ready add the onion, together with the oil. Add the reserved oil and mix well.
  6. Accompany with black Kalamata olives, or salted herrings.
