Ingredients
  • 3 tbsp olive oil
  • 1 medium onion, chopped
  • 1 tbsp minced garlic
  • 2 cups diced red bell pepper
  • 1 tsp chili flakes
  • 1/2 tsp salt
  • About 5-6 cups frozen chopped spinach
  • 2 cups cubed queso/quesadilla cheese
  • 1/4 cup cilantro
  • 3-4 cups enchilada sauce or salsa
  • 6-8 flour tortillas

Directions
  1. Preheat oven to 350 degrees.
  2. Sauté onions, garlic, pepper, chili flakes, and salt.
  3. Stir in spinach, cook until unfrozen and soft.
  4. Remove mixture from heat, add cilantro and 1/2 cup of the cheese, stir.
  5. Roll mixture into tortillas, and place as many as will fit into a greased baking dish.
  6. Top with sauce and remaining cheese, adding more if desired.
  7. Bake for 20 minutes.
