Hen Smoked Sausage Audouille Tasso Gumbo

- One large pot of cooked rice shopping list
- Large Soup / Gumbo Pot shopping list
- 1 large hen shopping list
- 1lb of sausage cut up into slices shopping list
- 1lb of audouille cut up into slices shopping list
- 1 lb of tasso cut up into small pieces shopping list
- 1 small yellow or white onion shopping list
- 1 bunch of green onions shopping list
- 1 jar Savoy Roux ( or make your own) shopping list
- 2 tlbsp of oil shopping list
- 3 qts of water (more less)( meaning you can put more or less) shopping list
- seasoning ,,,salt , pepper , tony's or slap yo mama..what you like in this type of seasoning... shopping list
How to make it
- In your large pot , on med to high heat
- put your oil then add your cut up hen
- brown the hen then take out.(takes about 15 to 20 minutes)
- take your tasso, smoked sausage, audouille and put into the same
- large pot and let it brown..about 15 minutes...
- then add yellow/white onions let saute' until they are clear
- add 1/2 the jar of roux and saute' this with the onions..
- adding about 2 cups of water let the roux soften to a liquid..
- then add your smoked sausage and tasso and audouille..let this
- cook for about 15 minutes then add hen and 6 cups of water.
- stirring letting this boil......keep adding enough water till you have it where it doesn't look like a stew but not as thin as a gravey.
- add your green onions and parsley. let all cook for about 2 hours or until the hen is tender.
- Have bowls ready with rice and use a laddle to put your gumbo into the bowl...........
- serve as a side dish with yams or potato salad ...
