How to make it

  • In your large pot , on med to high heat
  • put your oil then add your cut up hen
  • brown the hen then take out.(takes about 15 to 20 minutes)
  • take your tasso, smoked sausage, audouille and put into the same
  • large pot and let it brown..about 15 minutes...
  • then add yellow/white onions let saute' until they are clear
  • add 1/2 the jar of roux and saute' this with the onions..
  • adding about 2 cups of water let the roux soften to a liquid..
  • then add your smoked sausage and tasso and audouille..let this
  • cook for about 15 minutes then add hen and 6 cups of water.
  • stirring letting this boil......keep adding enough water till you have it where it doesn't look like a stew but not as thin as a gravey.
  • add your green onions and parsley. let all cook for about 2 hours or until the hen is tender.
  • Have bowls ready with rice and use a laddle to put your gumbo into the bowl...........
  • serve as a side dish with yams or potato salad ...
  • bon, bon!!
