This is one of our family's favorites. I sometimes serve it as a main dish and sometimes serve it as a side dish with something like Chicken Parmesan.

Ingredients
  • 1 lb frozen cheese tortellini
  • 3 TBS olive oil
  • 1/2 cup onion, chopped fine
  • 3 cloves garlic, diced
  • 1 pkg frozen chopped spinach (thawed and drained)
  • 1 cup tomato, seeded and chopped
  • 1/2 tsp parsley
  • 1/2 tsp oregano
  • 1 cup whipping cream
  • 1/2 cup fresh grated Romano cheese
  • 1/2 tsp salt
  • 1/2 tsp pepper

Directions
  1. Cook tortellin according to package directions and put to the side. 
  2. Saute garlic & onion in olive oil until tender. 
  3. Add spinach, tomato, parsley, oregano, salt & pepper. 
  4. Cook about 5 minutes.
  5. Stir in whipping cream and Romano cheese. 
  6. Cook until mixture comes to a boil. 
  7. Reduce heat and add in cooked tortellini. 
  8. Simmer an additional 5 minutes. 
  9.  
  10. Garnish with fresh shredded Romano cheese.

Gmm1966>Your recipe inspired me.I already had tortellini & spinach but I tweaked your recipe into a primavera.I added frozen peas & carrots,sauteed mushrooms and red bell pepper.I did not have frsh tomato but used canned diced.This is really good,thank you for the recipe!P.S I hope you arent mad I added a photo~Sola
