Creamy Tortellini Florentine

- 1 lb frozen cheese tortellini shopping list
- 3 TBS olive oil shopping list
- 1/2 cup onion, chopped fine shopping list
- 3 cloves garlic, diced shopping list
- 1 pkg frozen chopped spinach (thawed and drained) shopping list
- 1 cup tomato, seeded and chopped shopping list
- 1/2 tsp parsley shopping list
- 1/2 tsp oregano shopping list
- 1 cup whipping cream shopping list
- 1/2 cup fresh grated romano cheese shopping list
- 1/2 tsp salt shopping list
- 1/2 tsp pepper shopping list
How to make it
- Cook tortellin according to package directions and put to the side.
- Saute garlic & onion in olive oil until tender.
- Add spinach, tomato, parsley, oregano, salt & pepper.
- Cook about 5 minutes.
- Stir in whipping cream and Romano cheese.
- Cook until mixture comes to a boil.
- Reduce heat and add in cooked tortellini.
- Simmer an additional 5 minutes.
- Garnish with fresh shredded Romano cheese.
