Chilaquiles Recipe
Any food t.v. may remember Juan Carlos Cruz from Calorie Camando, this is his low- fat recipe for chilaquiles. Very yummy you won't think about it being better for you.

Ingredients
  • 1 Tbsp. canola oil
  • 1 pound lean ground turkey
  • 2 red onions, chopped
  • 4 cloves garlic, smashed and chopped
  • 1 1/2 tsps.chili powder
  • 1/4 tsp. cumin powder
  • 1 (4oz) can diced green chiles, not drained
  • 1 (15oz) can tomatoes with green chiles, not drained
  • Salt
  • 1 tsp. freshly ground pepper
  • 2 cups shredded low-fat cheddar
  • 1pint light cream cheese
  • 8 (6 inch) corn tortillas
  • 1 bunch green onions, sliced
  • 1/4 cup shredded low-fat mozzarella cheese

Directions
  1. Preheat oven to 350 degrees
  2. Heat a large non-stick skillet over medium-high heat.
  3. Add canola oil to coat the bottom of pan.
  4. Add ground turkey,breaking it up as it cooks, drain the meat and set aside.
  5. To the same skillet add onions and cook over medium heat until soft, then add the garlic and cook until soft.
  6. Stir in the chili powder and cumin.
  7. Add the chiles and their juices and the tomatoes and their juices.
  8. Add meat back to the pan and stir until combined.
  9. Reduce heat to low and simmer for 20 minutes or until thick. May add salt and pepper now til taste.
  10. In medium bowl, combine cheddar and cream cheese.
  11. Line casserole dish with half the tortillas and ladle half of the meat mixture over. Cover with half of the cheese mixture.
  12. Top with half of the green onions.
  13. Repeat layers 1 more time.
  14. Bake for 45 minutes or until bubbling and let stand for 5 minutes before serving.
  15. Total fat=14 grams Carbohydrates=25 grams
  16. Calories=329 Saturated fat= 6 grams
  17. Fiber=4 grams
