Apollo Pasta Recipe
This is a perfect meal when you want an lighter entree. Found this on the internet ages ago. It is one of my "go to" recipes when I want a simple meal.

Ingredients
  • 12 ounces penne pasta or any shape you might have on hand
  • 1 (14 ounce) can water-packed artichoke hearts
  • 2 teaspoons anchovy paste (optional)
  • 3 large tomatoes, seeded and cut into thin strips
  • 1 (2 ounce) can sliced black olives
  • 4 ounces feta cheese, crumbled
  • 1/3 cup olive oil
  • 4 tablespoons red wine vinegar
  • 1/2 package dry Italian salad dressing mix (regular or "zesty")
  • 1/4 cup fresh parsley, chopped
  • ground black pepper to taste

Directions
  1. Cook pasta according to package directions. Drain.
  2. Meanwhile, drain artichokes and chop into bite size pieces.
  3. In bowl, combine artichokes, anchovy paste, tomatoes, black olives, feta, olive oil, vinegar and salad dressing mix. Mix well.
  4. Add pasta. Toss to coat and mix.
  5. Add parsley and season to taste with salt and pepper.
