Apollo Pasta

- 12 ounces penne pasta or any shape you might have on hand shopping list
- 1 (14 ounce) can water-packed artichoke hearts shopping list
- 2 teaspoons anchovy paste (optional) shopping list
- 3 large tomatoes, seeded and cut into thin strips shopping list
- 1 (2 ounce) can sliced black olives shopping list
- 4 ounces feta cheese, crumbled shopping list
- 1/3 cup olive oil shopping list
- 4 tablespoons red wine vinegar shopping list
- 1/2 package dry Italian salad dressing mix (regular or "zesty") shopping list
- 1/4 cup fresh parsley, chopped shopping list
- ground black pepper to taste shopping list
How to make it
- Cook pasta according to package directions. Drain.
- Meanwhile, drain artichokes and chop into bite size pieces.
- In bowl, combine artichokes, anchovy paste, tomatoes, black olives, feta, olive oil, vinegar and salad dressing mix. Mix well.
- Add pasta. Toss to coat and mix.
- Add parsley and season to taste with salt and pepper.
