Springtime Vegetable Frittata

- 4 eggs shopping list
- 4 oz ricotta shopping list
- 2 spring onions, sliced shopping list
- 1 tomato, chopped shopping list
- 1/2 x 14 oz can of asparagus shopping list
- 1/2 red, green or yellow bell pepper, chopped shopping list
- 3- 4 tblsp milk to lighten mixture shopping list
- 1/4 tsp ground chili powder - optional shopping list
- olive oil or butter or cooking spray shopping list
- Optionals - you can add any type vegetable you like to this dish. shopping list
How to make it
- Combine eggs, milk, ricotta, chopped spring onions, tomatoes, canned asparagus and bell pepper.
- Pour into a frying pan, lightly oiled or buttered or sprayed and cook gently until well set.
- Serve with a salad, and crust bread, or fruit compote and croissant.
