Pork Tenderloin With Apples And Onions Recipe
This is really a tasty dish and an old stand-by! It's easy to double or triple and a tried and true combination of apples and pork. Courtesy Sunset's cookbook of Favorite Recipes II.

Ingredients
  • 1 whole pork tenderloin (12 oz)
  • 1 large onion, thinly sliced
  • 1 small Golden Delicious apple, thinly sliced
  • 2 Tablespoons butter
  • Parsley
  • Sherry Baste:
  • 6 tablespoons whipping cream
  • 2 tablespoons cream sherry
  • 1 teaspoon Dijon mustard
  • ½ teaspoon salt
  • ½ teaspoon horseradish

Directions
  1. Place pork on rack in broiler pan. Insert meat thermometer. Brush pork with the sherry baste. Cook at 425 degrees for 25-30 minutes until internal temperature reaches 170 degrees. Baste often.
  2. Add onions and apples in pan and cook stirring often until they are limp and golden.
  3. (Approximately 20 minutes)
  4. Add sherry baste and bring to a boil. Garnish with parsley. Pass Apple-Onion cream so guests can spoon over meat.
  5. (Tip: make extra sherry baste and apple-onion mixture.)
