Coconut Custard Pie Recipe
This is such a quick and easy dessert. It makes its own crust. This is all mixed in the blender and poured into the dish. If you like coconut and custard, this is perfect for you!

Ingredients
  • 2 c. milk
  • 3/4 c. sugar (fructose for diabetics)
  • 1/2 c. Bisquick or Jiffy baking mix
  • 1/4 c. butter or margarine, softened
  • 4 eggs
  • 1 1/2 tsp. vanilla extract
  • 1 c. coconut

Directions
  1. Blend all ingredients in blender for 1 minute.
  2. Pour into lightly greased pie plate (9" or 10") or square baking dish.
  3. Bake at 350 degrees for 50-55 minutes or until set in the center. Do not allow to brown on top.
  4. ***Serve with or without whipped cream or berries. You may even add some toasted coconut sprinkled on top before serving.
