Deep-fried Ricotta Balls Recipe
This appetizer is creamy and light although it is fried. This is a delicious complement to an Italian meal or pasta dish.

Ingredients
  • 1 1/3 c. ricotta cheese, drained of most liquid
  • 1/2 c. parmesan cheese
  • 1/2 c. (approximately 2 tbsp.) fresh parsley or 2 tsp. dried parsley
  • 1 garlic clove, thinly sliced
  • Pinch nutmeg
  • 1 egg, separated, + 1 egg
  • Salt & pepper, to taste
  • 2-3 c. olive oil
  • 2/3 c. bread crumbs

Directions
  1. Combine first 6 ingredients and mix well.
  2. Season with salt and pepper.
  3. Form into walnut-sized balls and set on rack to dry slightly, about 15 minutes.
  4. When ready to cook, put at least 2" oil in pan and heat to 360 degrees.
  5. Beat one egg white with one whole egg.
  6. Place crumbs in bowl.
  7. Dip each cheese ball into egg mixture; roll quickly in crumbs, making sure that they are covered, pressing crumbs on firmly.
  8. Carefully lower a few cheese balls at a time into oil and fry until golden.
  9. Remove with slotted spoon and drain on paper towels. Serve hot.
  10. ***You may like to dip cheese balls in tomato-based sauce of your choice.
