Crunchy Bok Choy Salad

- Dressing: shopping list
- 2 Tbl. sugar shopping list
- 3 Tbl. cider vinegar shopping list
- 3 Tbl. low-sodium soy sauce shopping list
- 2 tsp. peanut butter shopping list
- 1/2 tsp. curry powder shopping list
- 1/4 tsp. crushed red pepper shopping list
- Salad: shopping list
- 1 (3-ounce)package ramen noodles shopping list
- 1/4 C unsalted dry-roasted peanuts shopping list
- 3 C thinly sliced bok choy shopping list
- 1 C very thin red pepper strips shopping list
- 1/2 C shredded carrot shopping list
- 1/4 C diagnonally cut green onions shopping list
How to make it
- To prepare dressing , combine first 6 ingredients in a large bowl; stir well with a whisk.
- To prepare the salad, crumble noodles; discard seasoning packet.
- Heat a nonstick skillet over medium-high heat.
- Add peanuts; saute for 4 minutes or until browned. Remove from heat.
- Combine crumbled noodles, peanuts, bok choy, and the remaining ingredients in a large bowl.
- Drizzle dressing over salad; toss to coat.
- Serve immediately.

Tried that salad out yesterday, for a pot luck.Very tasty, it was the first one one :) Thanks for the recipe ( though it took a bit longer than 4 min to get it together, with chopping and all ;)
