  • Dressing:
  • 2 Tbl. Sugar
  • 3 Tbl. Cider Vinegar
  • 3 Tbl. low-sodium Soy Sauce
  • 2 tsp. Peanut Butter
  • 1/2 tsp. Curry Powder
  • 1/4 tsp. crushed Red Pepper
  • Salad:
  • 1 (3-ounce)package Ramen Noodles
  • 1/4 C unsalted dry-roasted Peanuts
  • 3 C thinly sliced Bok Choy
  • 1 C very thin Red Pepper strips
  • 1/2 C shredded Carrot
  • 1/4 C diagnonally cut Green Onions

Directions
  1. To prepare dressing , combine first 6 ingredients in a large bowl; stir well with a whisk.
  2. To prepare the salad, crumble noodles; discard seasoning packet.
  3. Heat a nonstick skillet over medium-high heat.
  4. Add peanuts; saute for 4 minutes or until browned. Remove from heat.
  5. Combine crumbled noodles, peanuts, bok choy, and the remaining ingredients in a large bowl.
  6. Drizzle dressing over salad; toss to coat.
  7. Serve immediately.
