This is an exotic version of the classic bread pudding. This version doesn't require a water bath. Its a flavor and texture explosion in your mouth.

Ingredients
  • 1 1/4 cup coconut milk
  • 1/2 cup sweetened condensed milk
  • 3/4 cup flaked coconut
  • 1/2 cup sugar
  • 2 eggs
  • 1/4 tsp fresh grated nutmeg
  • 1/4 tsp cinnamon
  • 1 tsp vanilla
  • 1/4 cup chopped pecans
  • 1/4 cup chocolate chips
  • 1/4 mango diced (more or less to taste)
  • 6 cups of cubed stale bread (I used old rolls)
  • Sauce:
  • Remaining coconut milk
  • Remaining sweetened condensed milk
  • 1 TBSP rum extract (or the real stuff)
  • 1 tsp vanilla

Directions
  1. In large bowl combine everything except bread.
  2. Mix well.
  3. Add bread.
  4. Put in 9" pie pan.
  5. Bake 350 for 45 minutes or until done.
  6. Sauce:
  7. Right before finished baking heat all sauce ingredients.
  8. Serve immediately with pudding.
