Ingredients
  • I did not measure AT ALL when I was making this so amounts are complete guesses:
  • 2 cups brown basmati rice
  • 2 large jalapeños, chopped small
  • 1 cup chopped fresh cilantro
  • 1/2 cup chopped fresh parsley
  • 1/2 cup shredded coconut
  • 1/2 tsp ginger
  • 1/2 tsp ground coriander seed
  • 1/4 tsp turmeric
  • 1 fat tbsp dijon mustard
  • 1 cup currants
  • 1 cup pine nuts
  • salt and black pepper to taste

Directions
  1. I have a rice cooker so I just threw it all in at once and let it do its thing. I'm sure you could do the same on the stove top but bring the water to a boil first and add the dry ingredients while the water simmers.
