How to make it

  • Place chicken in salted water with onions, fennel, salt and pepper
  • bring to a boil and simmer for an hour
  • Remove chicken and set aside untill cool enough to skin and debone
  • add carrots, potatoes and canned tomatoes
  • Remove chicken from bone and shred add to pot
  • Add broth or bulion paste and more water to cover if neccesary
  • Simmer for 10 minutes
  • add orzo and cook for an additional 8-10 minutes on medium high
  • Salt and peppar to taste
  • Garnish with parsley
