Italian Chicken Soup Recipe
Great alternative to chicken soup the potates and orzo make it hearty enough to be served alone.

Ingredients
  • whole chicken cut up
  • 16 oz can whole tomatoes
  • pot of water
  • 1/2 cup carrots diced
  • 1/2 cup onions diced
  • 1/4 cup fenel chopped
  • 4 medium potatoes diced
  • salt
  • pepper
  • parsely
  • chicken broth or two teaspoons better than bouilion
  • 1 cup orzo pasta

Directions
  1. Place chicken in salted water with onions, fennel, salt and pepper
  2. bring to a boil and simmer for an hour
  3. Remove chicken and set aside untill cool enough to skin and debone
  4. add carrots, potatoes and canned tomatoes
  5. Remove chicken from bone and shred add to pot
  6. Add broth or bulion paste and more water to cover if neccesary
  7. Simmer for 10 minutes
  8. add orzo and cook for an additional 8-10 minutes on medium high
  9. Salt and peppar to taste
  10. Garnish with parsley
