Lemon Almond Raisin Loaf

- 1 1/2 stick (12 Tablespoons) butter, soften shopping list
- 1/2 cup sugar shopping list
- grated zest of 1 lemon shopping list
- 2 extra large eggs, beaten shopping list
- 2 cups whole wheat flour shopping list
- 2 tsp. baking powder shopping list
- pinch of salt shopping list
- juice of 1/2 lemon shopping list
- 1/2 cup milk shopping list
- 3/4 cup chopped almonds shopping list
- 2/3 cup golden raisins shopping list
How to make it
- Preheat oven to 350F.
- Grease a 5'' x 9'' loaf pan and line the bottom with parchment paper.
- In a bowl,beat the butter, sugar and lemon zest with a wooden spoon until creamy, beat in eggs.
- Combine the flour, baking powder and salt in a bowl, and add to butter mixture:stir in lemon juice and milk.
- Mix in almonds and raisins, reserving 1 Tbsp.almonds for the top.
- Pour batter into prepared pan and sprinkle with reserved nuts.
- Bake 50 minutes, or until loaf is golden and a skewer inserted into the center comes out clean.
- Let cool in pan for 5 minutes, then remove to wire rack to cool completely.
