Lemon Almond Raisin Loaf Recipe

Ingredients

1 1/2 stick (12 Tablespoons) butter, soften

1/2 cup sugar

grated zest of 1 lemon

2 extra large eggs, beaten

2 cups whole wheat flour

2 tsp. baking powder

pinch of salt

juice of 1/2 lemon

1/2 cup milk

3/4 cup chopped almonds

2/3 cup golden raisins

Directions

Preheat oven to 350F.

Grease a 5'' x 9'' loaf pan and line the bottom with parchment paper.

In a bowl,beat the butter, sugar and lemon zest with a wooden spoon until creamy, beat in eggs.

Combine the flour, baking powder and salt in a bowl, and add to butter mixture:stir in lemon juice and milk.

Mix in almonds and raisins, reserving 1 Tbsp.almonds for the top.

Pour batter into prepared pan and sprinkle with reserved nuts.

Bake 50 minutes, or until loaf is golden and a skewer inserted into the center comes out clean.

Let cool in pan for 5 minutes, then remove to wire rack to cool completely.
