Quick Fruit Crumble Cake Recipe
Keep a can of pie filling on hand and you can make this dessert at a moments notice.

Ingredients
  • 1 cup butter, softened
  • 1/2 cup confectioners' sugar
  • 3 cup flour
  • 2 teaspoons cinnamon
  • 1 (21 oz.) can pie filling of your choice
  • whipped cream or confectioners' sugar (optional)

Directions
  1. Preheat oven to 350 degrees.
  2. In a large bowl, cream butter and confectioners' sugar until light and fluffy. Mix flour and cinnamon. Add to creamed mixture, 1 cup at a time. Batter should not be dry. Press some of the batter, in a thin layer, on the bottom and 1 inch up the sides of an 8 inch springform pan.
  3. Pour the pie filling over batter.
  4. Sprinkle the remaining batter in large crumbs over the entire cake.
  5. Bake 1 hour or until crumbs are brown.
  6. Cool on rack; remove sides of pan.
  7. Serve with whipped cream or sprinkle with confectioners' sugar.
