Fat Tuesday Grubin Gumbo

- 2 large chicken breasts shopping list
- 1 lb smoked lean turkey sausage shopping list
- 1 lb uncooked shrimp small-medium shopping list
- 2 cups okra shopping list
- 1/2 cup onion chopped shopping list
- 2 stalks of celery chopped shopping list
- 4 cloves of garlic minced shopping list
- 1/2 cup green pepper shopping list
- 4 tablespoons of flour shopping list
- 4 tablespoons of veg oil shopping list
- file powder (optional) shopping list
- creole seasoning shopping list
- salt shopping list
- pepper shopping list
- bay leaf shopping list
- 1 large can whole tomatoes shopping list
- 3 cups of water shopping list
- chicken builion shopping list
How to make it
- In large stock pot cook chicken in water with half of the onion to make a stock for 30 minutes
- remove chicken and shred set aside
- in a skillet prepare a roux using oil and flour make sure you continuously stir or it will burn and you will have to start over. stir for about 8-10 minutes untill it gets a nice dark blonde color and starts to smell nutty
- add the garlic, rest of onion, green pepper, and celery to the skillet untill the onions are cooked
- add the skillet contents, chicken and broken up can of tomatoes to the stock pot simmer
- in a skillet brown the sausage add to the pot
- fry the okra untill no longer stringy add to the pot
- add creole, seasoning, salt and pepper, bay leaf to taste
- simmer for 20 minutes
- in the last 8- 10 minutes add the shrimp untill cooked through
- serve over hot rice

I love this Cajun classic, gumbo is my favorite I even grew my own okra it made a real difference.
