Bruschetta with Tomatoes and Basil

- 4 med ripe tomatoes (about 1 2/3 pounds) cored&cut 1/2" dice shopping list
- 1/3 c shredded fresh basil leaves shopping list
- salt and pepper shopping list
- 1 12x5-inch loaf country bread,sliced crosswise into 1" thick pieces (ends removed) shopping list
- 1 or 2 large garlic cloves,peeled shopping list
- 3 tbl. extra virgin olive oil shopping list
How to make it
- heat broiler
- mix tomatoes, basil, salt and pepper (to taste) in medium bowl, set aside
- broil bread until golden brown on both sides
- place toasted slices on large platter
- rub garlic over tops
- brush with oil
- use slotted spoon to divide tomato mixture on toasted slices
- serve immediately

Always love to see Italian recipes, especially the kind that don't take a lot of time! I've been cooking Italian dishes since I was a young girl, and Italian cuisine is still my favorite. Just had to come up with what I call "skinny" versions!
