Bruschetta With Tomatoes And Basil Recipe
classic bruschetta you can whip up in a jiffy!

Ingredients
  • 4 med ripe tomatoes (about 1 2/3 pounds) cored&cut 1/2" dice
  • 1/3 c shredded fresh basil leaves
  • salt and pepper
  • 1 12x5-inch loaf country bread,sliced crosswise into 1" thick pieces (ends removed)
  • 1 or 2 large garlic cloves,peeled
  • 3 tbl. extra virgin olive oil

Directions
  1. heat broiler
  2. mix tomatoes, basil, salt and pepper (to taste) in medium bowl, set aside
  3. broil bread until golden brown on both sides
  4. place toasted slices on large platter
  5. rub garlic over tops
  6. brush with oil
  7. use slotted spoon to divide tomato mixture on toasted slices
  8. serve immediately

Always love to see Italian recipes, especially the kind that don't take a lot of time! I've been cooking Italian dishes since I was a young girl, and Italian cuisine is still my favorite. Just had to come up with what I call "skinny" versions!
