How to make it

  • Dredge shrimp in flour patting to make sure all sides are well coated.
  • Heat oil in large sauté pan over medium high heat.
  • When oil is very hot but not smoking add shrimp and sauté 2 minutes.
  • Stir in garlic and sauté an additional minute.
  • Remove from heat and drain off excess oil then set aside and keep warm.
  • Return pan and garlic to medium high heat.
  • Stir in wine, oregano, pepper flakes, salt and pepper then bring to a boil and cook 3 minutes.
  • Stir in tomatoes and cook 15 minutes then stir in basil and shrimp and cook 5 minutes more.
