Skillet Chicken Vesuvius

- 1 package chicken flavor rice a roni shopping list
- 12 unpeeled garlic cloves shopping list
- 3 tablespoons olive oil shopping list
- 1-1/2 teaspoons dried oregano leaves shopping list
- 1/2 teaspoon salt shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 1-14 teaspoon dried rosemary leaves shopping list
- 4 skinless boneless chicken breast halves shopping list
- 1 medium tomato chopped shopping list
- 4 lemon wedges shopping list
How to make it
- Prepare rice as directed on package.
- While rice is simmering combine garlic cloves and oil in second large skillet.
- Cover and cook over medium heat for 5 minutes.
- Combine seasonings and sprinkle over chicken.
- Push garlic to edge of skillet then add chicken and cook for 5 minutes on each side.
- Remove garlic with slotted spoon then squeeze softened garlic over chicken and discard peels.
- Stir tomato into rice and serve rice topped with chicken, juices and lemon wedges.
