Skillet Chicken Vesuvius Recipe
SKILLET CHICKEN VESUVIUS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Mundey Estate in Haley Texas in 1992.

Ingredients
  • 1 package chicken flavor rice a roni
  • 12 unpeeled garlic cloves
  • 3 tablespoons olive oil
  • 1-1/2 teaspoons dried oregano leaves
  • 1/2 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1-14 teaspoon dried rosemary leaves
  • 4 skinless boneless chicken breast halves
  • 1 medium tomato chopped
  • 4 lemon wedges

Directions
  1. Prepare rice as directed on package.
  2. While rice is simmering combine garlic cloves and oil in second large skillet.
  3. Cover and cook over medium heat for 5 minutes.
  4. Combine seasonings and sprinkle over chicken.
  5. Push garlic to edge of skillet then add chicken and cook for 5 minutes on each side.
  6. Remove garlic with slotted spoon then squeeze softened garlic over chicken and discard peels.
  7. Stir tomato into rice and serve rice topped with chicken, juices and lemon wedges.
