A crunchy and heavenly salad. With just a few ingredients, it's a snap to make. You won't be able to stop eating it. Holiday Fare.

Ingredients
  • 2 Tbl. Honey
  • 2 Tbl. Apple Cider Vinegar
  • 2 Tbl. Olive Oil
  • 2 cans sliced Beets (I use the ones in a jar)
  • 1 Fuji Apple
  • 1/4 C crumbled Blue Cheese
  • 1-2 tsp chopped parsley
  • Salt and Pepper to taste (optional)

Directions
  1. Make dressing:
  2. Whisk together honey, vinegar, and olive oil. Season with salt and pepper to taste. Set aside.
  3. Rinse and drain beets.
  4. Cut apple into slices.
  5. Gently toss beet and apple slices with dressing, coating well.
  6. Top with blue cheese and parsley.
