How to make it

  • Peel long ribbons of the zucchini and squash, or use a mandolin to create long "noodles."
  • In a large bowl, whisk together remaining ingredients.
  • Add the zucchini and squash and toss to mix well. Season to taste with salt or added soy, and freshly ground pepper.
  • Serve immediately, or allow to marinate for up to 2 hours in the fridge.
