Asian Zucchini Yellow Squash Salad

- 2 medium zucchini shopping list
- 2 medium yellow squash shopping list
- 3 tablespoons soy sauce or 2 tablespoons tamari shopping list
- 2 tablespoons rice wine vinegar shopping list
- 1 tablespoon dark sesame oil shopping list
- 1/4 teaspoon sugar shopping list
- 1/4 teaspoon red pepper flakes (or to taste) shopping list
- 1 teaspoon toasted sesame seeds shopping list
How to make it
- Peel long ribbons of the zucchini and squash, or use a mandolin to create long "noodles."
- In a large bowl, whisk together remaining ingredients.
- Add the zucchini and squash and toss to mix well. Season to taste with salt or added soy, and freshly ground pepper.
- Serve immediately, or allow to marinate for up to 2 hours in the fridge.
