Grilled Swordfish Recipe
Fresh Swordfish with a delighful easy finish. Quantity of fish can be reduced Only 200 calories per serving.........Enjoy!

Ingredients
  • 1 Tbl EVOO
  • 1/2 C finely chopped shallots
  • 1 Tbl finely chopped thyme (1/2 the amount if dried)
  • 1/2 tsp sugar
  • 1/2 tsp lemon peel
  • 2 Tbl Dijon mustard
  • 2 Tbl white wine or water
  • 2 Lb swordfish, cut into 6 serving size pieces

Directions
  1. Heat Grill or broiler
  2. In a small non-stick skillet, heat oil over medium heat until hot
  3. Add shallots; cook and stir about 3 minutes or until tender
  4. Remove from heat and stir in thyme, sugar, lemon peel, mustard and wine or water until well blended
  5. Spread 1/2 the mixture on one side of swordfish
  6. Oil grill rack or spray broiler pan (or line a 15 x 10x 1 pan with foil)
  7. Grill or broil 4 to 6 inches from heat for about 6 to 7 minutes
  8. Turn fish and spread with remaining mixture
  9. Cook an additional 7 minutes or until fish slakes easily with a fork
  10. If broiling, mixture will be lightly browned
  11. 6 servings
