Grilled Swordfish

- 1 Tbl EVOO shopping list
- 1/2 C finely chopped shallots shopping list
- 1 Tbl finely chopped thyme (1/2 the amount if dried) shopping list
- 1/2 tsp sugar shopping list
- 1/2 tsp lemon peel shopping list
- 2 Tbl Dijon mustard shopping list
- 2 Tbl white wine or water shopping list
- 2 Lb swordfish, cut into 6 serving size pieces shopping list
How to make it
- Heat Grill or broiler
- In a small non-stick skillet, heat oil over medium heat until hot
- Add shallots; cook and stir about 3 minutes or until tender
- Remove from heat and stir in thyme, sugar, lemon peel, mustard and wine or water until well blended
- Spread 1/2 the mixture on one side of swordfish
- Oil grill rack or spray broiler pan (or line a 15 x 10x 1 pan with foil)
- Grill or broil 4 to 6 inches from heat for about 6 to 7 minutes
- Turn fish and spread with remaining mixture
- Cook an additional 7 minutes or until fish slakes easily with a fork
- If broiling, mixture will be lightly browned
- 6 servings
