How to make it

  • Heat Grill or broiler
  • In a small non-stick skillet, heat oil over medium heat until hot
  • Add shallots; cook and stir about 3 minutes or until tender
  • Remove from heat and stir in thyme, sugar, lemon peel, mustard and wine or water until well blended
  • Spread 1/2 the mixture on one side of swordfish
  • Oil grill rack or spray broiler pan (or line a 15 x 10x 1 pan with foil)
  • Grill or broil 4 to 6 inches from heat for about 6 to 7 minutes
  • Turn fish and spread with remaining mixture
  • Cook an additional 7 minutes or until fish slakes easily with a fork
  • If broiling, mixture will be lightly browned
  • 6 servings
