How to make it

  • Preheat oven to 375F.
  • In large bowl, toss potatoes with shallots, oil, Italian seasoning, salt and pepper.
  • Spread in single layer in jellyroll pan.
  • Roast, stirring occasionally, until potatoes and shallots are tender, 35 minutes.
  • Transfer to bowl, stir in parsley.
