Skillet Fish And Vegetables

- 1 (14 1/2 oz) can chicken broth shopping list
- 1 C fresh baby carrots. quartered lengthwise shopping list
- 1/2 c chopped celery shopping list
- 1 Tbl dried parsley flakes shopping list
- 1 3/4 C uncooked instant brown or white rice shopping list
- 1 lb cod or any firm, mild white fish shopping list
- 1/4 tsp garlic-pepper blend shopping list
How to make it
- In a 12 inch skillet, combine broth, carrots, celery and parsley.
- Bring to a boil
- Reduce heat to medium low and cook covered 3 mintues
- Uncover skillet; return to boil
- Stir in rice
- Top with fish; sprinkle with garlic pepper blend
- Reduce heat to medium low; cover and cook 10 to 15 minutes or until liquid is absorbed and center of fish flakes easily with a fork
- Garnish with parsley sprigs, if desired
