Ingredients
  • 3 large Green Onions
  • 1 piece peeled Gingerroot, about 2" by 1"
  • 4 6-ounce Catfish Fillets
  • 1 C Chicken Broth
  • 1/4 tsp. ground Red Pepper
  • 1 Tbl. Salad Oil
  • 1 Tbl. Soy Sauce
  • 1 Tbl. Seasoned Rice Vinegar
  • 1 tsp. Cornstarch
  • Water

Directions
  1. Preheat oven to 450 degrees.
  2. Cut each green onion in half. Cut bottom halves into matchstick-thin strips; dice tops.
  3. Slice gingerroot into matchstick-thin strips.
  4. In 13" by 9" dish, place catfish and 1/4 cup chicken broth; sprinkle with red pepper and diced green onions.
  5. Bake, covered, 15 minutes or until fish flakes.
  6. Meanwhile, in nonstick 10-inch skillet over medium heat, in hot salad oil, cook green-onion strips and ginger until golden.
  7. In cup, mix soy sauce, vinegar, cornstarch, remaining broth, and 2 tbl. water; pour into skillet; heat to boiling. Boil 1 minute, stirring, until thickened.
  8. Pour ginger sauce over catfish to serve.
