ITALIAN BEEF ROLL-UPS Recipe
SERVED WITH GARLIC BREAD AND A TYPE OF FRUIT AND IT IS THE PERFECT MIX FOR DINNER

  • 18 OZ FROZED CHOPPED BROCCOLI
  • 3 1/2 C WATER
  • 6 TBS MARGARINE
  • 4 CUPS INSTANT MASHED POTATOES FLAKES
  • 1 1/2 C MILK
  • 2 OZ ( 1/2 C ) SHREDDED FRESH PARMESAN CHEESE
  • 16 - 1/8" THICK SLICES OF DELI ROAST BEEF, RED CENTER IF POSSIBLE
  • 24 OZ OF HOMEMADE OR JAR BEEF GRAVY, I'VE MADE GRAVY USING WYLER'S BEEF BOUILLON
  • 2 CANS 14.5 TOMATOES WITH GARLIC, OREGANO, AND BASIL, UNDRAINED
  • 4 TBS PARSLEY
  • 4 TBS SHREDDED FRESH PARMESAN CHEESE

Directions
  1. 375. SPRAY 2 13X9" OR 6 QT BAKING DISH WITH COOKING SPRAY.
  2. COOK BROCCOLI AS DIRECTED ON PACKAGE. DRAIN WELL
  3. IN SAUCEPAN, BRING WATER AND MARGAARINE TO A BOIL. REMOVE FROM STOVE, ADD POTATO FLAKES AND WARMED MILK; MIX WELL STIR 1/2 C PARMESAN AND COOKED BROCCOLI.
  4. SPREAD ABOUT 1/2 C POTATO MITURE ON EACH SLICE OF BEEF. ROLL. PLACE BEEF SEAM SIDE DOWN IN BAKING DISH. COMBINE GRAVY AND TOMATOES, MIX WELL. POUR OVER BEEF ROLLS. COVER WITH FOIL. BAKE AT 375 FOR 25 MINUTES, REMOVE COVER, BAKE 10 MINUTES LONGER. REMOVE SPRINKLE WITH PARSLEY AND 4 TBS PARMESAN CHEESE. SERVE.
