Applesauce-oatmeal Muffins Recipe

Ingredients

2 C all-purpose Flour

1 C Sugar (can be reduced to 3/4 C)

4 tsp. Baking Powder

1 1/2 tsp. Salt

1 1/2 tsp. Cinnamon

1/2 tsp. Nutmeg

pinch of Cloves

2 C Applesauce

1/2 C Butter or Margarine, melted

3 large Eggs

1 1/2 C plus 2 Tbl. Oats

1 C Raisins

Directions

Preheat oven to 375 degrees.

Grease eighteen 2 1/2-inch muffin-pan cups.

Combine flour, sugar, baking powder, salt, cinnamon, nutmeg and cloves in large bowl; stir into dry ingredients until moistened. Stir in 1 1/2 cups oats and the raisins.

Spoon batter into prepared muffin cups.

Sprinkle tops with remaining oats.

Bake 20 to 25 minutes, until toothpick inserted in center comes out clean.

Remove from pans.

I love muffins and I've been meaning to try some new recipes. Maybe I'll give this one a go and sub craisins for raisins (I'm weird, I like raisins, just not baked in anything).
