Neat little jewels of lemon glazed excellence. Easy recipe from a rural Arkansas kitchen.

Ingredients
  • 1 yellow cake mix
  • 4 eggs
  • 1 box lemon pudding
  • 3/4 cup oil
  • ---------
  • Glaze
  • ---
  • 1 box confectionary sugar
  • 3 tbsp water
  • 1 tblsp lemon zest
  • 1/3 cup lemon juice
  • 3 tblsp oil

Directions
  1. Mix all of the above and beat 2-3 minutes
  2. Fill small muffin pans half full
  3. ----
  4. bake at 350 deg.F for approx. 12 minute
  5. ------
  6. GLAZE
  7. --------
  8. Combine all of the ingredients and dip top of muffins into glaze and set aside
