drunken herring

- 1/2 bottle of a good red wine (Mâcon) shopping list
- 2-3 onions shopping list
- 3 carrots (or more) shopping list
- 4 stalks of cellerie shopping list
- all cut into thick slices shopping list
- 1 bay leave shopping list
- 1 bouquet garni shopping list
- 4to 6 peppercorns shopping list
- salt and pepper to taste (about 1/2 teasp. salt, a few turns of the pepper mill) shopping list
- 4 fresh herrings, gutted and cleaned (if you can, try to remove the the fish bones carefully if you are not sure you and your guests can handle removing them at the table *g* - but the fish is juicier if left whole) shopping list
- you may use any other kind of 'fat fish', too shopping list
- braised mushrooms, tiny braised onions and some parsley shopping list
How to make it
- put wine, vegetables, bouquet garni, peppercorns, salt and pepper in pot, cooking at low heat for about 30 min.
- in the meantime, prepare fish
- preheat oven to 180 °CENTIGRADE
- place fish into baking dish
- strain liquid
- pour carefully over fish - they should be almost covered
- cover and bake about 30 minutes
- remove cover
- leave fish to sit for another 5 or 10 minutes
- decorate with mushrooms, onions and parsley
- serve with boiled potatoes
