this dish is especially forShandy and her father-in-law. found it last night in my handwritten notes.looks pretty - tastes good!

Ingredients
  • 1/2 bottle of a good red wine (Mâcon)
  • 2-3 onions
  • 3 carrots (or more)
  • 4 stalks of cellerie
  • all cut into thick slices
  • 1 bay leave
  • 1 bouquet garni
  • 4to 6 peppercorns
  • salt and pepper to taste (about 1/2 teasp. salt, a few turns of the pepper mill)
  • 4 fresh herrings, gutted and cleaned (if you can, try to remove the the fish bones carefully if you are not sure you and your guests can handle removing them at the table *g* - but the fish is juicier if left whole)
  • you may use any other kind of 'fat fish', too
  • braised mushrooms, tiny braised onions and some parsley

Directions
  1. put wine, vegetables, bouquet garni, peppercorns, salt and pepper in pot, cooking at low heat for about 30 min.
  2. in the meantime, prepare fish
  3. preheat oven to 180 °CENTIGRADE
  4. place fish into baking dish
  5. strain liquid
  6. pour carefully over fish - they should be almost covered
  7. cover and bake about 30 minutes
  8. remove cover
  9. leave fish to sit for another 5 or 10 minutes
  10. decorate with mushrooms, onions and parsley
  11. serve with boiled potatoes

I could just hug the stuffings out of you! I am so sorry that I just got here tonight! Working 6 days a week and sneaking into our lovely site whenever I can get 5 minutes. Hubby just bought me a wireless thingy for my laptop so that I can do my homework for on-line college while commuting to and from work. Little does he know that all I could think about was now I could sneak here more often. He doesn't really need to know does he? Did I mention I love you right to death?
