Baked Drunken Chicken With Raisins Recipe
This is my favorite baked chicken recipe. Seems like you cooked all day ! I have made it for company..they loved it. Serve with rice and a nice crusty bread to soak up all the good sauce.

Ingredients
  • 8 boneless, skinless chicken breast halves
  • salt and fresh ground pepper to taste
  • 1 cup flour
  • 2 TBLS. olive oil
  • 2 TBLS. butter
  • 1 large onion, finely chopped
  • 2 TBLS. minced fresh parsley
  • 1 15 oz. can chopped or diced tomatos
  • 1/2 tsp. ground cinnamon
  • 1/4 tsp. ground cloves
  • 1/4 packed light brown sugar
  • 1 cup Sherry or Vermouth (never have used the Vermouth)
  • 1/2 cup golden raisins

Directions
  1. Season chicken with salt and pepper and dredge with flour.
  2. Heat oil and butter in a large skillet and brown chicken.
  3. Place browned chicken in shallow 3 quart casserole or similiar baking dish.
  4. In the same pan that you cooked the chicken, cook the onions until transparent.
  5. Add parsley, tomatoes with liquid, cinnamon, cloves, brown sugar, sherry and raisins.
  6. Simmer uncovered for 15 minutes stirring occasionally.
  7. Pour sauce over chicken and bake at 375 for 30 minutes.
  8. Enjoy!
