How to make it

  • Season chicken with salt and pepper and dredge with flour.
  • Heat oil and butter in a large skillet and brown chicken.
  • Place browned chicken in shallow 3 quart casserole or similiar baking dish.
  • In the same pan that you cooked the chicken, cook the onions until transparent.
  • Add parsley, tomatoes with liquid, cinnamon, cloves, brown sugar, sherry and raisins.
  • Simmer uncovered for 15 minutes stirring occasionally.
  • Pour sauce over chicken and bake at 375 for 30 minutes.
  • Enjoy!
