White Bait And Peanuts With Dry Chilli Recipe

I like this side dish a lot, it's hot but it's good, good with rice or with beer :)

Ingredients
  • 300 grams of white bait
  • 500 grams of raw peanut
  • 6 tbs of oil
  • 2 garlics, finely chopped
  • 1 spring onion, finely sliced
  • 2 tbs of sugar
  • 3 tbs of dried chilli pepper flakes
  • 1 teaspoon of soy sauce
  • pinch of salt

Directions
  1. With medium low heat, fry peanuts until brown and crisp, transfer the peanuts on a bowl, ( leaving the oil in the wok)
  2. fry white bait with medium low heat until it's brown and crisp, becareful if the white bait is over fried than it will tastes bitter
  3. add garlic and spring onion, keep stirring until garlic is golden brown, return the peanuts to the wok
  4. remove excess oil, add sugar keep stirring to slightly caramelize everything
  5. add soy sauce and salt, stirr until everything is well mixed, cool
  6. store it in a container, refrigerate
  7. serve in small plates
