How to make it

  • With medium low heat, fry peanuts until brown and crisp, transfer the peanuts on a bowl, ( leaving the oil in the wok)
  • fry white bait with medium low heat until it's brown and crisp, becareful if the white bait is over fried than it will tastes bitter
  • add garlic and spring onion, keep stirring until garlic is golden brown, return the peanuts to the wok
  • remove excess oil, add sugar keep stirring to slightly caramelize everything
  • add soy sauce and salt, stirr until everything is well mixed, cool
  • store it in a container, refrigerate
  • serve in small plates

    I too am a big fan of white bait and peanuts. Do you know the origin of this recipe? I have seen it in Japanese, Taiwanese and Chinese cuisines.
