A great biscotti recipe that is low in carbs, low in calories, and delicious!! A great compliment to a cappuccino or a nice gelato!

Ingredients
  • 3/4 cup All purpose flour
  • 3 Tablespoons Organic Sugar
  • 3 Tablespoons packed brown sugar
  • 2 Tablespoons Unsweetened Cocoa
  • 1 teaspoons baking powder
  • 1/4 teaspoon salt
  • 2 egg whites, softly beaten
  • 2 Tablespoons butter
  • 1 Tablespoon Chocolate Syrup
  • 1/2 cup puffed wheat cereal
  • 4 teaspoons sliced almonds

Directions
  1. Preheat Oven to 350 degrees. Line a baking sheet with parchment paper and set aside.
  2. Combine flour, sugar, brown sugar, cocoa, baking powder, and salt in a medium bowl; set aside.
  3. Beat egg whites in a small bowl on high speed until small peaks forms
  4. Melt butter in a small saucepan, pour in a small bowl. Add chocolate syrup and egg whites. Stir butter mixture into flour mixture to form stiff dough. Stir in cereal.
  5. Turn dough out into baking sheet; shape into 12X2 inch log. Press almonds onto log. Bake 20-25 minutes or until firm.
  6. Reduce oven temperature to 300 degrees.
  7. Cool completely on wire rack.
  8. When cool; using a seratted knife, cut loaf into 1/2 inch thick diagonal slices.
  9. Place slices, cut side down on cookie sheet. Bake biscotti 10 minutes. Turn over and bake an additional 10 minutes.
  10. Cool completely on wire rack, enjoy!
