Mexican Rice and Beans

- 1 onion, chopped shopping list
- 1/2 pound of ground sirloin shopping list
- 2 Tbsp Mexican chili powder shopping list
- 1 tsp ground cumin shopping list
- 1 can (19 oz or 540mL) of blank or kidney beans. I often get a smaller can of each and use both shopping list
- 1 3/4 cup of tomato juice shopping list
- 1 3/4 cup frozen corn shopping list
- 1 1/2 cups white rice shopping list
- 1/3 cup fresh cilantro, chopped shopping list
- 1/2 cup light cheddar cheese, grated shopping list
How to make it
- Fry the onion and beef in large frying pan.
- Add the remaining ingredients except CORN, CILANTRO and CHEESE.
- Simmer about 15 minutes or until rice is nearly done
- Add the frozen corn when 5 minutes is left for the rice.
- Serve in bowls and top each with chopped cilantro and grated cheese.
