Russian May Day Feast

- 4 large potatoes with skin shopping list
- 2 pickled herrings or any other smoked, salted or pickled fish of your choice, i.e. smoked salmon, trout, etc... shopping list
- 1 large yellow onion, thinly sliced shopping list
- 2 large slices fresh sourdough bread shopping list
- butter, olive oil, white vinegar, salt, sugar, fresh ground pepper to taste shopping list
- fresh tomatoes shopping list
- fresh feta cheese or goat cheese shopping list
- fresh chopped dill weed shopping list
How to make it
- Boil potatoes with skin until very tender
- Bring 2 cups of water to boil in a small sauce pan, turn off the heat
- Add 2 tbsp sugar and throw in the onions for 1-2 minutes. Drain water - this will kill most of the onion's bitterness and leaves just the flavor and crunch.
- Fold the onions out in a small bowl.
- Pour olive oil and 2 tbsp vinegar over it
- Skin still hot potatoes carefully, place on serving dish.
- Cut potatoes in half lengthwise and place a slice of fresh butter inside each potato. Sprinkle with dill
- Clean and slice herring and arrange it on a serving platter.
- Place the onions over the herring and garnish with fresh herbs if desire
- Slice feta cheese
- Quarter tomatoes and sprinkle lightly with coarse salt and ground pepper.
- Spread butter on bread.
- Serve each component on a separate tray or platter, let your guests help themselves.
