How to make it

  • Preheat oven to 375 degrees
  • Cook carrots, covered in 1/2 inch boiling water for 8 minutes
  • Drain
  • Pour carrots into 1 quart baking dish and add raisins, butter, honey,
  • lemon juice and ginger
  • Bake uncovered for 35 minutes, stirring occasionally
  • Sprinkle with almonds and serve
