Asparagus With Vinaigrette

- 2 pounds fresh asparagus spears washed and trimmed shopping list
- 4 tablespoons olive oil, divided shopping list
- 2 tablespoons fresh lemon juice shopping list
- 2 teaspoons spicy mustard shopping list
- 1/2 teaspoon freshly ground black pepper shopping list
- 1/4 teaspoon salt shopping list
- 12 grape tomatoes cut in half shopping list
- 1/4 cup grated parmesan cheese shopping list
How to make it
- Stir fry asparagus in 1 tablespoon olive oil until tender crisp.
- Combine 3 tablespoons olive oil, lemon juice, mustard, salt and pepper in jar with lid.
- Shake jar to blend ingredients well.
- Place asparagus in a shallow bowl or serving platter.
- Just before serving top with grape tomato halves then add vinaigrette dressing.
- Sprinkle with grated parmesan cheese.
