How to make it

  • Stir fry asparagus in 1 tablespoon olive oil until tender crisp.
  • Combine 3 tablespoons olive oil, lemon juice, mustard, salt and pepper in jar with lid.
  • Shake jar to blend ingredients well.
  • Place asparagus in a shallow bowl or serving platter.
  • Just before serving top with grape tomato halves then add vinaigrette dressing.
  • Sprinkle with grated parmesan cheese.
