Favorite Eggs Benedict Dated 1951 Recipe
FAVORITE EGGS BENEDICT DATED 1951 This recipe came from an estate sale. I obtained it when I purchased the family collection from the Bowers Estate in Fort Worth, Texas in 1994.

Ingredients
  • 4 English muffins
  • 8 slices Canadian bacon
  • 8 eggs
  • 2 avocados
  • 1 cup mayonnaise
  • 2 tablespoons lime juice
  • Hot sauce to taste

Directions
  1. Toast English muffins then place 2 halves on each plate.
  2. Lightly sauté bacon and top each muffin half with a slice.
  3. Poach eggs and top each slice of bacon with 1 egg.
  4. Mash avocados then whip in mayonnaise, juice, and hot sauce with wire whisk until smooth.
  5. Pour over eggs benedict.
