FRIED GRITS This recipe came from an estate sale. I obtained it when I purchased the family collection from the Locke Estate in Seagoville, Texas in 1984.

Ingredients
  • 2 cups grits cooked
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 teaspoon flour
  • 2 eggs beaten
  • 1/3 teaspoon pepper
  • 1 teaspoon sugar
  • 1/2 cup margarine
  • 1/4 cup milk
  • 3 eggs beaten
  • Canola oil

Directions
  1. Cook grits according to package directions with 1/2 teaspoon baking powder added to water.
  2. Stir in eggs then add margarine, flour and sugar.
  3. Mix well and cook 15 minutes longer.
  4. Pour grits mixture into shallow dish to a thickness about 3/4".
  5. Cover with plastic wrap and refrigerate overnight then cut grits into squares of desired size.
  6. Sprinkle with salt and pepper.
  7. Beat 3 eggs well and add 1/4 cup milk.
  8. Dip squares in egg mixture and fry in hot oil in a large iron skillet until golden brown.
  9. Turn only one time.
  10. Drain on paper towels and serve immediately.
