Ingredients
  • 2 tablespoons butter
  • 1 cup chopped onion
  • 1 cup chopped carrot
  • 1/3 cup chopped celery
  • 1 1/2 cups vegetable broth
  • 1 teaspoon dried basil
  • As much black pepper as you like
  • 1 (28-ounce) can diced tomatoes, undrained
  • 2 cups 1% milk

Directions
  1. Melt the butter in a saucepan over medium-high heat.
  2. Add onion, carrot, and celery and sauté until veggies are tender.
  3. Add broth, basil, pepper, and tomatoes, and bring to a boil.
  4. Reduce heat and simmer for 15 minutes.
  5. Stir in 1/2 cup of the pasta.
  6. Remove from heat; let stand 5 minutes.
  7. Place half of tomato mixture in a blender, and process until smooth.
  8. then pour the puréed soup into a large bowl.
  9. Repeat procedure with remaining tomato mixture. Return puréed soup to pan
  10. **** for the step above I use my hand held blender so I leave it all in the pot****
  11. stir in the remaining pasta and the milk
  12. Cook over medium-high heat 2 minutes or until thoroughly heated, stirring frequently (do not boil).
