Burrito Casserole Recipe
This is an excellent casserole and fairly easy to put together...Has lots of yummy flavor... my family loves this. This recipe is off the back of Williams Diced Tomatoes.

Ingredients
  • 2 pounds ground beef
  • 1 onion, chopped
  • 1 package chili seasonings
  • 1 can rotel tomatoes
  • 2 cans refried beans (16 oz size)
  • 4 cups shredded cheddar cheese (16 oz)
  • 1 package flour tortillas (12)

Directions
  1. Cook ground beef and onions in a large skillet over medium heat until meat is brown.
  2. Stir to crumble meat and drain.
  3. Add chili seasonings and rotel tomatoes and simmer for 10 minutes.
  4. Arrange half of the tortillas in a lightly greased 9 x 13 inch pan.
  5. Top with half of refried beans, half of chili mixture, and half of cheese.
  6. Repeat with remaining ingredients.
  7. Bake in preheated 350 degree oven for 30 to 40 minutes.
  8. Garnish with optional ingredients:
  9. Sour cream, chopped lettuce, chopped tomatoes, olives and peppers or green onions.
  10. Cut into wedges and serve

Hi there, since we don't eat the red meat, ground turkey is really good. I also make chili with ground turkey and nobody ever knows until I tell them. Thanks for posting. Got my 5!
