Manhattan Clam Chowder In Slow Cooker Recipe
An easy crockpot version of Manhattan Chowder.

Ingredients
  • 6 strips cooked bacon, crumbled
  • 1 cup uncooked potatoes, chopped
  • 1 cup uncooked celery, chopped
  • 1 cup uncooked onions, chopped
  • 1 cup parboiled carrots, chopped
  • 1 28-ounce can crushed tomatoes
  • 1 or 1-1/2 large cans V-8 juice
  • Salt and pepper to taste
  • 1 teaspoon thyme
  • 1 bay leaf
  • 4 cans minced or chopped clams, including juice

Directions
  1. Add all ingredients to slow cooker. Stir. Cook 8 hours on low, or until vegetables are done. You can spice this up by using Spicy V-8 or by adding some hot sauce.
