Cajun Cornbread

- 1 c. self-rising cornmeal shopping list
- 1/2 c. self-rising flour shopping list
- 1/8 tsp. cayenne pepper shopping list
- 3/4 c. buttermilk shopping list
- 2 eggs shopping list
- 2 tbs oil shopping list
- 1/2-1 lb. of Andouille sausage, cooked and diced or minced shopping list
How to make it
- Preheat oven to 350°F.
- Combine cornmeal, flour and pepper. Stir it well to distribute pepper.
- Add buttermilk, eggs and oil and mix well.
- Fold in sausage.
- Pour batter into a greased shallow baking dish, (I use an 8x8 glass dish).
- Bake for approximately 20 to 25 minutes, and serve with a lot of butter.
- TIP: I serve it with my Cajun Butter Sauce (posted here).
