Cajun Cornbread Recipe
Yummy spicy cornbread. It's not too hot and you can always eliminate the cayenne pepper as well as Andouille sausage if you prefer. It'll still bake perfectly.

Ingredients
  • 1 c. self-rising cornmeal
  • 1/2 c. self-rising flour
  • 1/8 tsp. cayenne pepper
  • 3/4 c. buttermilk
  • 2 eggs
  • 2 tbs oil
  • 1/2-1 lb. of Andouille sausage, cooked and diced or minced

Directions
  1. Preheat oven to 350°F.
  2. Combine cornmeal, flour and pepper. Stir it well to distribute pepper.
  3. Add buttermilk, eggs and oil and mix well.
  4. Fold in sausage.
  5. Pour batter into a greased shallow baking dish, (I use an 8x8 glass dish).
  6. Bake for approximately 20 to 25 minutes, and serve with a lot of butter.
  7. TIP: I serve it with my Cajun Butter Sauce (posted here).
