How to make it
- Preheat oven to 350°F.
- Combine cornmeal, flour and pepper. Stir it well to distribute pepper.
- Add buttermilk, eggs and oil and mix well.
- Fold in sausage.
- Pour batter into a greased shallow baking dish, (I use an 8x8 glass dish).
- Bake for approximately 20 to 25 minutes, and serve with a lot of butter.
- TIP: I serve it with my Cajun Butter Sauce (posted here).
