- 2 cups (or 1 19oz can) cooked romano beans (can used canned or dried. Canned work well) shopping list
- 2 cups vegetable stock shopping list
- 3 cloves fresh minced garlic shopping list
- 1/4 cup fresh lemon juice shopping list
- I find the garlic & lemon can be added to taste - I like more lemon than is called for. I always double my batches when I make this soup, and use extra garlic & lemon juice. Taste as you go. shopping list
How to make it
- In a large saucepan comine beans, stock, garlic, and lemon juice.
- Bring to a boil.
- Reduce heat & simmer uncovered for about 15 minutes or until flavours mingle and garlic is tender.
- With a hand blender - blend the soup until very smooth.
- Ladle into warm soup bowls and serve with fresh bread.
- I find this soup best hot & with warm bread - but it is actually meant to be chilled, so you can serve it either way depending on your preference or the season.
