Ingredients
  • 3 to 4 large apples, peeled, cored and sliced
  • water
  • 1/3 cup sugar
  • 2 tbsp butter
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1 tbsp lemon juice
  • 3 eggs
  • 1/3 cup powdered sugar
  • 1 tsp vanilla

Directions
  1. Preheat oven to 400 degrees
  2. Place apples in medium saucepan with about inch of water. Cok until apples are soft.
  3. Put 2 heaping cups of apples in mixing bowl. Stir in sugar, butter, nutmeg, cinnamon, and lemon juice
  4. Separate eggs yolks from egg whites. Beat egg yolks. Add the apple mixture, beat well.
  5. Grease a 9 inch square baking pan. Pour mixture into greased pan. Bake for 15 minutes.
  6. Meanwhile, put egg whites into a medium bowl. Beat eggs whites until stiff. Slowly add powdered sugar and vanilla. Continue to beat until completely mixed in, but stays stiff.
  7. Remove apple miture from oven after 15 minutes, pour meringue over top all the way to the edges.
  8. Reduce oven temp to 325 degrees. Return pan to oven.
  9. Bake until meringu is slightly browned.
  10. Col and cut into rectangles.
